Sesame Noodles with Chicken

Ingredients
Chicken
- 2 lbs chicken breast or thighs, sliced into thin strips
- Salt and pepper, to taste
- 2 tbsp neutral oil (for searing)
Sauce
- 6 tbsp soy sauce
- 4 tbsp sesame oil
- 2 tbsp rice vinegar (or any vinegar on hand)
- 2 tbsp honey or sugar
- 4 tsp fresh ginger, grated
- 4 garlic cloves, minced
- Chili flakes, to taste (optional)
- Hot water, as needed to thin
Noodles
- 16-20 oz spaghetti or lo mein noodles
- Sliced scallions, for topping
- Sesame seeds, for topping (optional)
Instructions
- Season chicken strips with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear chicken in 2-3 batches (don't crowd the pan) until cooked through, about 5-6 minutes per batch. Set aside.
- Whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, garlic, and chili flakes. Thin with a splash of hot water if too thick.
- Cook noodles according to package directions. Drain but do not rinse — noodles should be hot.
- Toss hot noodles with sauce immediately, then add chicken back in and toss again.
- Top with scallions and sesame seeds. Serve immediately.
Notes: Doubling the base recipe scales cleanly 1:1. No specialty ingredients required — all items available at a standard grocery store.
